Banana Chocolate Muffins

Banana and chocolate are a great combination, so why not try these scrummy alternatives to the usual chocolate muffin?

What you need:

  • 2 cups plain flour
  • 1/3 cup white sugar
  • 2 tablespoons cocoa powder
  • 1 tablespoon baking powder
  • 1 cup mashed bananas
  • 2/3 cup vegetable oil
  • 1 egg, beaten
  • 1 cup chocolate chips

What to do:

  1. In a large bowl combine the flour, sugar, cocoa powder and baking powder.
  2. In another bowl, blend the bananas, oil and egg together.
  3.  Add to dry ingredients, mixing just until blended.
  4. Fold in the chocolate chips.
  5. Spoon the batter into a greased muffin pan, filling 3/4 full.
  6. Bake in a preheated 425 degree F(220 degrees C) for 15 to 20 minutes.
  7. Remove the muffins to a wire rack to cool completely.
