Christmas Tree biscuits

These cute edible Christmas trees are easy to make using your star shaped cookie cutters. They are a great way to get your toddler busy in the preparations for Christmas and they taste yummy too!

What you need:

*Gluten-free , nut-free

  • 250g butter, softened
  • 3/4 cup caster sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups plain flour (gluten free if you require)
  • 100g dark chocolate, melted
  • 1 tablespoon icing sugar for dusting
  • a packet of mini smarties or silver balls to decorate

What to do:

  1. Preheat the oven to 180C.
  2. Line two baking trays with non-stick baking paper.
  3. Cream the butter and sugar together.
  4. Add the egg and vanilla and beat until smooth.
  5. Add the flour and mix until a smooth dough forms.
  6. Divide the dough into three. (One for each size cookie cutter)
  7. Wrap the dough portions separately in plastic wrap and refrigerate for 30 minutes.
  8.  Roll each piece of dough between two pieces of baking paper until 5mm thick.
  9. Use three different sized star shapes to cut 4 biscuits of each size.
  10. You will need to roll each piece of dough out 2-3 times to get all the biscuits.
  11. Place biscuits on baking trays and cook for 10-15 minutes until golden.
  12. Allow to cool
  13. For each tree, place one large star on a flat surface-this will be the bottom of the tree. Blob a small amount of melted chocolate on the biscuit and place another large star, slightly off line with the one below. Continue with using the chocolate to stick on progressively smaller biscuits.
  14. Decorate by using melted chocolate or icing to stick mini smarties to the tree.
  15. Sift icing sugar use to dust ’snow’ onto the trees.

TIP: you can also add green food colouring to the dough for a more authentic look!
