Pumpkin Fruit Cake

A delicious and decadent pumpkin cake with the added goodness of sultanas, raisins, apricots and fruit juice!

Ingredients:

  • 125g sultanas
  • 125g raisins
  • 125g mixed peel
  • 125g dried apricots, finely chopped
  • 1 cup of orange or apple juice
  • 1 tablespoon of honey
  • 1 teaspoon bicarbonate of soda
  • 4 egg whites
  • 1 cup cold mashed pumpkin
  • 1 and 3 quarter cups self raising flour
  • 1 teaspoon mixed spice

Method:

  1. Preheat oven to 165C.
  2. Lighlty grease and line the base  a 20 cm round cake tin with baking paper.
  3. In a saucepan place the fruit, juice and honey. (It is a good idea to do this the night before and allow the fruit to soak)
  4. Bring to the boil, stirring gently.
  5. Remove from the heat and add bicarbonate of soda.
  6. Allow to cool.
  7. In a large bowl beat the egg whites lightly.
  8. Add the fruit mix and mashed pumpkin and beat until smooth.
  9. Stir in the flour and mixed spice.
  10. Pour into prepared tin and bake for 90 minutes.
  11. Alow to cool and dust lightly with icing sugar.
