VERY QUICK AND EASY BANANA BREAD

This Banana Bread recipe went down really well at my local toddler group. I often make it with my own children because it is a very child-friendly recipe..easy to get them involved in the preparation. Plus it is filled with some really good stuff (if you don’t mind the sugar!).

 What you need:

 · 1-1/2 cups plain flour

· 3 teaspoons baking powder

 · 1/3 cup oil ( I like to use olive oil-but regular vegetable oil works well too) ·

 2 teaspoons cinnamon

· 1/2 cup sugar

· 2 medium eggs, well beaten

 · 1/4 cup brown sugar

· 3/4 cup oatmeal

· 1/2 teaspoon baking soda

 · 1/4 cup milk

· 2 cups mashed bananas (about 3 really ripe bananas)

What to do:

1. Mix everything in one bowl and stir it up. Pour mixture into a greased and floured loaf tin and bake at 180C for 50-60 minutes.

OR

If you prefer Banana muffins, spoon the mixture into muffin cases in your muffin tin and bake at 180C for 15 minutes.
