Here’s a bunchful of easy summer salads and vegetable dishes to get rid of the winter blues that are at long last, fading into the distance.

After all, who wants to spend hours slaving over a hot stove when friends are round for brunch, the garden is in flower and the wine is chilled and ready to pour?

Make sure that you buy the best ingredients for your salads – the freshest possible. Don’t take what the supermarkets give you even if it’s easier to just pick up the ready-packed tomatoes, cucumbers, onions, bell peppers etc. There is a reason why supermarkets prepackage, and it’s not always convenience!

To make sure you get the best, take a minute or two and pick over the vegetables, choose what is firm, ripe and ready to use. The freshest means that you don’t need the heavy bottled sauces and dressings to create a great flavour – the beautiful veggies and fruit do it for you.

All you need to do is to create combinations of ingredients that have a nice crunchy texture and their flavours complement and work together. Add a little light salad dressing to set it all off, and let the taste buds do the rest! So choose well, cook quickly and simply and your friends won’t have finished the wine by the time you get there!
