Ever thought of putting courgette in a muffin? Well you should. As odd as it sounds, the courgette barely adds flavour, at least in this recipe it is masked by the deliciousness of chocolate. So why use courgette in your muffin then? Well, it provides a lovely moist texture and softens the muffin. You know how easily muffins can be dry and crumbly? The addition of courgette ensures that your muffin will be a treat every time.
I love hidden vegetables in food my family view as treats. This recipe uses courgettes that otherwise would go to waste as my kids are of the kind that will eat anything so long as they don’t know it’s there. And I love that they are getting the goodness of a courgette in a food they believe to be a treat. If only they knew! This courgette muffin is sure to please even the fussiest of eaters.
Make some ahead of time and freeze them ( they freeze really well) for school lunches, for after school snacks or as a treat to go with a nice warm drink.
