Banana and chocolate are a great combination, so why not try these scrummy banana chocolate muffins as an alternative to the usual chocolate muffin?
OK, so the picture definitely does not suggest a healthy muffin as I have icing and a bit of chocolate on top, but I have been trying to cut a bit of refined sugar from our family diet and so recommend that you use erythritol or xylitol as a sugar replacement when baking these banana chocolate muffins for a healthier alternative.
What you need:
- 2 cups plain flour
- 1/3 cup white sugar or sugar substitute
- 2 tablespoons cocoa powder
- 1 tablespoon baking powder
- 1 cup mashed bananas
- 2/3 cup vegetable oil
- 1 egg, beaten
- 1 cup chocolate chips
What to do:
- In a large bowl combine the flour, sugar, cocoa powder and baking powder.
- In another bowl, blend the bananas, oil and egg together.
- Add to dry ingredients, mixing just until blended.
- Fold in the chocolate chips.
- Spoon the batter into a greased muffin pan, filling 3/4 full.
- Bake in a preheated 425 degree F(220 degrees C) for 15 to 20 minutes.
- Remove the muffins to a wire rack to cool completely.
These muffins are gorgeous straight from the oven while the chocolate chips are still soft and gooey and not yet solid as they become once the muffins has cooled.
These banana chocolate muffins are also really quick to make so you can whip up a batch for a Saturday morning breakfast or an impromptu afternoon tea. My children say it’s like a quick cake fix without all the fuss!
They are also very easy to freeze which makes them ideal for school lunch boxes.I simply allow them to cool, wrap them tightly in a small plastic freezer bag and put it in the freezer. Take one out the night before to defrost and pop it into your child’s lunchbox for a lovely home made treat.
