Here is a quick kids meal for those rushed after school days. It uses a few simple ingredients that you may already have in your store cupboard or fridge. Add a nice green salad or a side of their favourite vegetables for a filling and tasty dish.

How to make Crustless Egg Pie
Ingredients:
3 slices of white bread- crumbed (I put them into my food processor to crumb them)
500ml Milk (full fat or skimmed)
125g Bacon – chopped and fried (chopped Pancetta is just as good)
400g Viennas/ frankfurters – chopped into pieces (if you don’t like using these sausages, you could use diced cooked chicken breast.)
4 eggs
1ml dry mustard powder (optional)
3ml salt
Pepper (optional)
150g grated Cheddar cheese
Paprika
To make:
Preheat oven to 180°C.
Soak bread in the milk for about 3 minutes. Stir until well mixed, add bacon and sausage pieces.
Whisk eggs, mustard, salt and pepper together
Mix everything together and fold in 2/3 of the grated cheese
Pour into dish and sprinkle the rest of the cheese on top.
Bake for 35 minute.
