Another courgette recipe? Yes! During the late summer and early autumn, I have a huge amount of courgettes growing in my garden. I always seem to plant to many and end up with more than we could hope to eat in regular meals.
I have become adept at hiding them in various recipes for baked goods. This one is a rather sneaky one as the chocolate flavour means that you don’t even know you are eating vegetables at all! And, who doesn’t enjoy a chocolate muffin?
I like that my muffins are a little healthier-gotto get those greens in somehow- and that it feels like a treat at the same time.
