A Christmas Stuffing…with a difference

Fruity Apple Raisin Christmas Stuffing

• 3/4 cup of minced onion
• 1 1/2 cups of chopped celery
• 1 cup of butter
• 7 cups of soft bread cubes
• 1 tablespoon of salt
• 3 cups of finely chopped apples
• 3/4 cup of raisins
• 1 1/2 teaspoons of crushed sage leaves
• 1 teaspoon of thyme leaves
• 1/2 teaspoon of pepper

1. In large pot, cook and stir onion and celery in butter until onion is tender.
2. Stir in about 1/3 of bread cubes.
3. Turn into deep bowl.
4. Add remaining ingredients and toss.
5. Stuff your turkey, duck or chicken just before roasting.

Yields 9 cups or enough for a 12 pound turkey.

Tip:  If you have left over stuffing grease a baking pan and bake the stuffing at 180C until just turning brown – about 25-30 minutes. Serve as a side dish.
